Absolutely delicious! I may add a little more almond flour to make the chicken easier to form into balls but otherwise, excellent!
Too much preparation.
I made it exactly as the recipe called for. It was very good. I would double the sauce though as there was not enough to go around. I sprinkled more grated Swiss cheese on top of the meatballs before serving them. For those that like a little more spicey heat, it is easy to add more spices before forming the meatballs.
Had this tonight for dinner. The family loved it, I will definitely make it again!
So good! Added some almond flour to the sauce and butter to make it thicker and used chicken bouillon instead of broth for more of a flavor pop and it was a hit!
I made the recipe just as written except I didn't have ham steak but ham slices. I chopped it up and added it to the meatballs. It was delicious. I cooked the sauce for a while while I made cauliflower gnocchi and it thickened up nicely. Definitely a keeper!
I thought this was delicious! But let me be clear, I DID NOT MAKE THIS "KETO STYLE", I was drawn to this NOT for the keto but because it sounded good. I used ground turkey (generally when i make any type of meatball i do a 50/50 mix of turkey/beef, I did NOT do that this time but will next time..the turkey alone was too much for the hubby.) I used (homemade) bread crumbs in place of almond flour (kept adding until i found the consistency i like, approx 1c). I also cooked these in some broth in the bottom of the pan. And because i read some of the reviews that said the sauce was too thin, i made a roux first (using 1.5 tbs butter, 1.5 tbs olive oil and 3 tbs flour). I used 1 c skim milk & 1/2c heavy cream and omitted the water. It came out very creamy and rich. I served them over brown rice that i cooked in chicken broth.
This is an excellent recipe for our whole family. I doubled the amount and I’m glad I did, NO LEFTOVERS!! I followed the recipe exactly, I let the ground chicken mixture “sit” for about 2 hours after putting everything together and that made making the meatballs easy. I served it with garlic butter green beans and it was all devoured. We are a family of 5 and we all agree: 5 stars!
