1 large egg
3 tablespoons mayonnaise
1 tablespoon minced green onions
4 teaspoons lemon juice
1 teaspoon dried tarragon
⅛ teaspoon red pepper flakes
8 ounces crabmeat
½ cup crushed buttery round crackers
1 tablespoon butter

Step 1: Whisk egg, mayonnaise, green onions, lemon juice, tarragon, and pepper flakes together in a medium bowl. Gently stir in crabmeat, being careful not to break up meat. Gradually mix in cracker crumbs, adding until desired consistency is achieved. Form crab mixture into 4 patties.

I made this recipe using 2 4oz cans of tuna instead of crab and served with tartar sauce. Very good!

To be fair I made one minimal change. I had a 6 oz can of crab meat so I made half the recipe. I used 1-1/2 tablespoons liquid egg substitute so I could use "half an egg". It turned out very soupy even using extra Ritz crackers. The tarragon was really the only taste in the finished product. I was very disappointed.
I used panko instead of crackers.Too much mayonnaise forced me to use more panko than i would like. Next time I will dial the mayo down to 2 tblsps. I didn't have tarragon so I used old bay, and I added fresh chopped parley. Forgive the paper plate, I didn't feel like creating more dishes to wash.
