I have been making this salad for quite a while. It's always a big hit. My sister and I both agreed it seemed like something was missing. So now whenever I make it, I add a 1/2 cup each of toasted coconut and toasted slicedd almonds. I leave just enough coconut & almonds aside to garnish around the edge of the serving bowl and the center. A great side dish or as a dessert for pot lucks.

All the girls in my family love this dessert! I am diabetic so most things I make from scratch to be sure what goes in. I start with large pearl tapioca and measure 1 cup of pearls and cover them with about 4 cups of water and allow that to sit for at least 2 hours or overnight then drain the water off. I use sugar free pudding and jello then follow the recipe. I have used several different jellos Black Cherry with fresh sweet cherries and fresh diced pears (definitely seed the cherries lol) Lemon Jello with lemon rind (about 1/2 tsp), diced apple and mandarins, and peach jello with diced peaches and pineapple. The pudding mixture is great and I will make again using different flavors. I did not use the mandarin or pineapple; instead I used blood orange pieces. It was delicious and can be simply eaten without add-ons.
I’ve made this twice. The second time I left out the vanilla pudding because I thought it made it too rich and sweet. I was making it for guests who don’t like foods that are very sweet. I’m a big fan of tapioca so I really love this twist of the orange flavor and the Mandarin oranges. I will definitely make it again.
