I used 2 cans of light coconut milk to reduce the fat content.Add some sirracha to your own bowl if you want yours spicy.I seasoned with salt after.This recipe is definitely in my rotation now, thank you!
Not even close. 4 cups of chicken stock is way too much. this is supposed to be a thick and creamy dish, with 4 cups. It's completely watered down. Had to boil on the stove for forty five minutes to get it to the right thickness and consistency. Very disappointed.

Most recipes call for several slices of galangal with the lemongrass and then removing the chunks. I ran mine through a large sieve. Eddico's suggestions are solid.My grocery carries a Tom Kha Gai frozen packet of lemongrass and galangal for quick prep.
Delicious. Taste like Thai resturant. I was going to add chicken instead of shrimp but chicken was frozen. Delicious with just mushrooms. I followed the recipe except I was not able to mince the lemongrass. So I cut in 4 mini stalks and let boil in soup. Taste comes through. From my experience all red curry paste are not equal. Try Thai kitchen.
