Ingredients For Perfect Lobster Bisque Recipes
3 tablespoons butter
¼ cup chopped fresh mushrooms
2 tablespoons chopped onion
2 tablespoons chopped celery
2 tablespoons chopped carrot
1 (14.5 ounce) can chicken broth
⅛ teaspoon salt
⅛ teaspoon cayenne pepper
1 ½ cups half-and-half
½ cup dry white wine
½ pound cooked lump lobster meat

I reduced about of sherry to 1/4 c and added tomato paste. Thickened it with 1/8c g.f. flour in h&h mixture. It was real good.
We really enjoyed this. I did not simmer it 30 minutes - the lobster was cooked already. I did add 1 tbsp cornstarch with 2 tbsp 1/2 n 1/2 to thicken it. Otherwise I stuck to the recipe. It would be great with salmon instead of lobster.

It was not what we consider a traditional Lobster Bisque. Don't need to include the lobster for 30 minutes at the end of the recipe because it makes the lobster tough.
I thought it was delicious. Other recipes for bisque seemed so much more complicated. I didn’t have half-and-half, and used heavy cream. (A very fine substitute!) I made mine with two lobster tails that were leftovers. I think it was enough for the good flavor this recipe produced.
