Best banana bread I’ve ever eaten. This is my new banana bread recipe. I made a double batch but misjudged how much banana I was going to have. I only had 2 cups of mashed banana so I just used the yolk of the fourth egg. I added 1/4 cup broken pecans to one loaf. 350 degree preheated oven baked for about 50 minutes using toothpick test.Crust was delicious, able to slice in pan almost immediately, center is perfect! Best ever!
Easy banana bread but I did add raisins & walnuts !
Added vanilla. walnuts to 1 loaf made 5 all turned out great, keep an eye on them. Setting a timer and walking away isn't a good idea that's how you end up with over cooked dry bread.

Took the advice of the top review and reduced the flour to 1 1/2 cups of flour (same amount of mashed banana I had), which significantly improved the texture and flavor from my previous by-the-book attempt. Of course, this was a recipe made with the overripe bananas I had on hand but I would have liked to add at least one more banana to really make the flavor pop. I also switched to 3/4 c brown sugar to replace the white sugar and that was perfect for me. When I made it again with the flour adjustments, I again had 1 1/2 c banana on hand but only white sugar, so I used 2/3 c of white sugar -- that was a tad too sweet for me. Finally, a dash of cinnamon was a really nice addition!

I half the specified sugar and add 1 tbls. Cinnamon 1/2 tsp. Vanilla extract and its good to go.
It was ok...I think my bananas were too ripe maybe. I might try a recipe that has maybe more spices.
only change is i use half white sugat half brown sugar
