I love Tater Tot Casserole. Been making it for many years. I add diced Green Pepper and onions to the the beef when browning the beef. I also put Velveeta Cheese on top of the soup layer before adding the tots. Cannot beat it.

I liked stirring the soup in the pan with the cooked meat. So much easier.
I have added in sautéed red,yellow,orange and green bell pepper and onion. Condensed cheddar cheese soup and a large can of cream of mushroom soup and a Tablespoon of Worcestershire sauce and French fried onions. You can also use chopped crispy bacon.
Try it with chorizo and a little chopped onion.Easy and tasty!
Very nice base.I added sauteed onion, garlic and a bit of heavy creme to the meat mixture. I also added a small (drained) can of peas+ carrots.Kept everything else. It's a good base recipe provided to build on. Thanks!
I've been making this for YEARS... I skip the mushroom soup stuff and use Cream of Potato. I also season the meat some and add a ton of cheese.. AMAZING
