½ cup almonds, crushed into chunks
7 ounces dark chocolate chips (50% cacao)

Step 1: Spread almonds in a large skillet; toast over medium heat until starting to brown, 3 to 5 minutes. Pour almonds into a bowl.
Step 2: Melt chocolate in top of a double boiler over simmering water, stirring frequently and scraping down the sides to avoid scorching, about 5 minutes. Remove from heat; pour in almonds and stir until evenly coated.
Step 3: Drop spoonfuls of chocolate-almond mixture onto a plate lined with waxed paper.
Just made this. It's awesome. Not sure if they need to be refrigerated though. I put them in the fridge because I'm unsure.
I used the microwave to melt the chocolate in a bowl. I used peanuts also. Just like a Goobers bar.
My family and friends loved this recipe. I tried it for a friend who’s anemic because of chemo. Dark chocolate is high in iron and almonds are also healthy. I was hoping to help give her extra calories that were also healthy. I made two batches one night and took these shortcuts for the second batch: I microwaved the chocolate chips in 20 second bursts until it was liquid. After tasting one “rock” from the first batch, I skipped roasting the almonds in a skillet. I chilled the “rocks” in ice cube trays sprayed lightly with “no-stick“.
This recipe is fast and so easy. Plus SO DELICIOUS! We even mixed semi-sweet and milk chocolate it was still great. We just keep in fridge! Yum.

I used 1/4c walnuts, 1/4c raisins, and added a few shakes of salt--VERY good. However, as I'm going for more of a "chocolate-covered" type of treat, I will try it again with half the chocolate. Oh! I also just put the chocolate chips (minis) in a glass bowl in the microwave--30 seconds on high, stir, 30 seconds on high, then stir until completely melted.

Wow, what a good recipe - so easy and delicious. I didn't have the dark chocolate required so I used what I had, which was a mix of pure chocolate baking squares: bittersweet, semi-sweet and unsweetened. I waited a few minutes for the mixture to cool slightly so that they would keep a nice shape on the waxed paper. The only change I'd make next time is to increase the ratio of almonds to chocolate as the last few flattened out more because they had less nuts in them. They made a nice hostess gift ; I will surely make these again.
