I used a 6qt. cast iron Dutch oven-fried my bacon/set it aside, then used 1 stick of butte(1/2 cup) and Skim Milk, it was YUMMY!!!
This recipe is wonderful!The only thing I did differently was roast some garlic and kept the skins on the baked potatoes.It is absolutely not something you can walk away from so make sure your baked potatoes and bacon are done in advance. This ensures that when you get to the rouxe you can focus on that.
We LOVED this recipe! I made it as written except I didn't have any green onions on hand. So I dice a medium yellow onion and sauteed it in the butter before adding the flour. Then proceeded as written. This soup is our favorite potato soup now! Thank you very much Sherry!
One of my pet peeves is when people writing a review give a recipe 5 stars and then list all the changes they made. It can't be a 5 star recipe if you had to make changes. And if they're giving 5 stars to their own variation, they shouldn't be doing that here since it's a different recipe. That seems to be what many of the 5 star reviews for this recipe do.I was making it according to the recipe, but it wasn't nearly thick or creamy enough for what I wanted, so like many others did, I added instant potatoes. I also added more water and chicken bouillon since this is a small batch. If I make this again, I'll leave out the flour entirely and just use the instant potatoes to make it "thick, creamy." I'd also change the title to potato and cheese soup.

I made it and its better than some recipes I've found. Next time i will use less flour and i also made mine gluten-free because i have celiac and cant have gluten. I also did it on a budget and opted out the bacon. Lol
So I love this recipe, but recently I’ve been skipping the flour bit and half of the milk. INSTEAD I use Idahoan potato packages to thicken it and swap that half of milk for chicken stock. I also add some garlic powder and it’s literally THE BEST upgrade to this recipe!
