Cucumber Salad is a refreshing and crisp dish that celebrates the simplicity of fresh ingredients. Begin by thinly slicing cucumbers, preferably English or Persian, to enhance their tender texture. Combine these delicate cucumber slices with thinly sliced red onions, creating a beautiful visual contrast and adding a mild bite.
To elevate the flavor profile, incorporate cherry tomatoes, halved for a burst of sweetness, and thinly sliced radishes for a peppery crunch. Fresh dill and mint provide aromatic notes, enhancing the overall freshness of the salad.
Create a light and tangy dressing by whisking together extra virgin olive oil, white wine vinegar, a touch of Dijon mustard, and a hint of honey for sweetness. Season the dressing with salt and pepper to taste, ensuring a harmonious balance of flavors.
Gently toss the cucumber mixture with the dressing, ensuring every ingredient is coated evenly. Allow the salad to chill in the refrigerator for at least 30 minutes, enhancing the crispness and melding the flavors.
This Cucumber Salad is a versatile side dish that complements a variety of meals. Serve it alongside grilled proteins, as a light accompaniment to sandwiches, or as a standalone refreshing salad on a hot day. Its simplicity, coupled with vibrant flavors, makes it a go-to option for picnics, barbecues, or any occasion where a light and invigorating salad is desired. I used this recipe for meal prepping and I couldn’t stop eating it at every meal. It so crisp and refreshing!
Quick and easy recipe for cucumber salad. As others have mentioned, it could benefit from some salt and maybe even a little pepper. Otherwise, a flat sweet taste is all you get. I used English cukes and peeled some of the skin (although not necessary with this variety) as suggested. Next time, I'd add salt, pepper, and a pinch of red pepper flakes to jazz it up a bit.
I followed the recipe exactly. The dressing/solution is spot on. I didn’t like the resulting texture after pouring it hot over the cukes and onion. It kind of par cooked the veggies and they were not as crispy as I’d like. Family loved them though and I was asked for the recipe a few times that night. If you want then w little less “cooked” ok would cool the solution to room temp before adding to the cukes and onion.
My whole family loves this recipe and that's like five people. So this will be my go-to recipe for cucumbers salad.
This salad is like eating pickles right out of the jar! Delicious!!I added green pepper strips and ground black pepper. I substituted the sugar for 1/3 cup monk fruit sweetener. I also used my veggeti pro on the ribbon cut setting for the cucumbers and did not peel them.
I’ve made this many times. I was surprised that the recipe didn’t tell us to salt the cucumbers first after you’ve sliced them. Because if you don’t, the cucumbers have way too much liquid in salad once it’s made. I use kosher salt to brine the cucumbers once I slice them. I let it sit for about an hour, then drain them. Add the onions last with a small amount of dill. I have a lot of cucumbers in my garden. This is a way of using my surplus.
Very good. I did not boil anything just poured it over cukes. Also I use WAY lest sugar. Is that a miss print? 3/4 of a CUP? I used 1.5 Tbsp. Still a nice easy recipe when your garden is producing a lot of cucumbers
I make this cucumber salad quite often because I love it so much! I used to make a green salad whenever we had people over for a bbq or dinner but found that no one ate it. I switched to just this cucumber salad and it's worked out well. If I want to add some color I cut grape tomatoes in half or quarters and toss them in with the cucumber. I eat it as is, but I've had guests use it on their burgers or hotdogs, but no matter what, it's a big hit. I make it for myself all the time!
So simple, light and refreshing. Great way to add more vegetables to your diet.
