I've made this recipe a few times. I, personally, cannot stand mayo ... However, using mayo as the base is PERFECT - you would never guess I had used mayo - even I can't tell I used mayo once it's been cooked. I also combine it with panko bread crumbs ... it's now a family favorite.For extra flavor/breading taste, I'll slice up the chicken breasts into strips or medallions and then proceed as normal ...Left-overs? Used chicken tender size pieces that were marinated all day in roasted garlic and Stubbs chicken dry rub seasoning. Dipped in mayo mix and bread crumbs as stated in the recipe. Baked at 350 degrees for about 30 minutes flipping chicken half-way through this time using our air fryer oven. Broiled for 2 minutes to crisp a little more. Turned out wonderfully moist, tender and delicious!
