My daughter has food allergies and has muffins every day for breakfast. This is my go-to recipe for her! I do substitute oatmilk for dairy milk (allergy) and allergen friendly chocolate chips. Recipe comes out delicious! Sometimes I add pureed carrots/squash/sweet potato for added nutrients.
I tried a variation by replacing banana with the grated rind & fruit of 2 small oranges. After grating rind peel oranges & process in food processor. They turned out great.

Loved it, a hit with my family. I added a quarter cup sugar instead of the recommended half cup and it was plenty sweet. In fact, I won't add the sugar at all next time. I feel the banana and chips will suffice .
Very nice muffins! I made 6 jumbo ones. Not too sweet..but that's how we like it. I drizzled melted chocolate on top. I did use 3 bananas. Not huge banana flavour, but overall good, and I would make them again.
Added 1/4 cup of unsweetened applesauce for moisture and my bananas were small. Came out great!
