1 cup cold cooked rice, or more to taste
1 egg, or more to taste
2 green onions, sliced, or more to taste
2 teaspoons soy sauce, or to taste

Step 1: Heat oil in a large skillet over medium-high heat. Spread rice in a flat layer in hot oil; cook until crispy on the bottom, 2 to 3 minutes.
Step 2: Stir egg into rice until scrambled, about 2 minutes more. Sprinkle green onions on top and season with soy sauce.
I've made this many times and consider it to be an excellent cure for hangovers (don't judge). I prefer to cook the eggs slightly over-easy and then break the yoke on top of the rice. The green onions and soy sauce take it to the next level.
Mixed in some diced onion, red pepper and garlic - that was fried in toasted sesame oil - to the rice&egg mixture. Stirred in soy sauce with a little Sriracha - Yummm. Next time maybe I'll add in some seasoned rice vinegar to either the onion/pepper mix, or at the end.
An excellent, easy fried rice recipe for those of us that are indecisive or picky. Most people like rice, eggs, onions. You can't go wrong. So simple yet surprisingly tasty and irresistible. Just the right amount of salt without being greasy or heavy. Would make again.

Didn't have any green onion, but still tasted great with salt, pepper, and a splash of soy sauce. I prefer brown over white rice so i used brown rice instead and it turned out good.
Simple, quick, and delicious! I am enjoying it right now in my favorite rice bowl with chopsticks. The snipped scallions add just the right note.I added 1/3 cup of frozen peas in order to have veg or fruit in each meal, and also to increase the protein.( I didn’t add crumbled nori or Furikake , but I think it might be nice.)
I almost always use short-grain sushi rice - i like my rice salty and sticky. As an easy meal, I cook sesame oil and an egg in the same pot as the sushi rice (yes, I have a rice cooker) and put it into a chawan bowl. Because I still can't stand the texture of/master TKG (Tamago Kake Gohan) even though raw eggs never made me sick. My favorite toppings are Norigoma/Tarako Furikake (rice sprinkles), butter, and Everything Bagel Seasoning.
Very tasty and easy to make. I add left over cooked bacon crumbles to this for a nice change.

I have been making a version of this rice for a few years and its just a simple easy delicious breakfast. Letting the rice get a tad crispy is better than frying the eggs first as I was making until I discovered this recipe. I sometimes add chopped ham or bacon to make it more heartier.

Easy and versatile. I had no green onions or soy sauce. So I chopped some sweet onion and added it to the chilled rice. After looking for some soy sauce, I decided to just try it plain and it was still very good.
Sometimes you need a ridiculously easy recipe to convince you to try... this recipe was that for me. Skipped the green onions because I didn't have any on hand, and used 2 eggs to increase the protein. Didn't even bother to measure the rice. Easy, delicious, repeatable. When I make rice for another purpose, i may start always making extra just so I can make this again! Ha!
