Far to fishy aftertaste. For my personal preference would only add one anchovy and taste before adding any more and not the 5 suggested on this recipe. Used fresh homemade mayonnaise and think it will be great when adjusted to my personal preference.

Tweeked the recipe a bit, used a reduced fat olive oil based mayo, added finely diced scallion, Romano/Asiago cheese, lemon caper and Hungarian paprika which gave it an amazing Smokey flavor.I use it as a dip with pita crisps as well. Subtracting egg yolk in this version decreases cholesterol and only slightly modified taste and texture. This is seriously addicting!!

What a great recipe. Keeps in fridge for about a week and no worries about raw egg or buttermilk. Even took about a 1/4 cup out and brushed it on cooked wings sprinkled with more parm and was excellent!
This is handsdown the best Ceasar I have ever tasted and I'm really picky when it comes to Ceasar. I will never buy store bought again. I added the olive oil too the dressing on accident but it was still amazing.
Mayonnaise does not belong in real Caesar dressing. It should be made in a wood salad bowl. Garlic, anchovies and salt mashed together to form a paste then all other ingredients added save for the mayonnaise which does not belong. Use one raw egg in place of mayonnaise.
