1 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
10 slices bacon
2 (8 inch) unbaked pie shells
1 egg white, lightly beaten
2 cups shredded Swiss cheese
4 large eggs
1 ½ cups half-and-half cream
¼ teaspoon ground nutmeg
salt and pepper to taste
Instructions: Asparagus Quiche Recipes
Step 1: Preheat the oven to 400 degrees F (200 degrees C).
Step 2: Place asparagus in a steamer over 1 inch boiling water. Cover and cook until tender but still firm, 2 to 6 minutes. Drain and cool.

I used chopped broccoli & bacon ( snip it before frying with scissors) & made my own pie crust ( cheaper). Wonderful spring addition to breakfast or luncheon!
I've made it several times but this last I used cremini mushrooms instead of bacon. Fried up the mushrooms and asparagus together worked out perfect. Frying has is the best way to go.

Just add an extra egg, cubed ham and/or sausage *I use the brown and serve after frying them with the bacon. I add in broccoli, onions, peppers, mushrooms, and cheddar cheese. There are never any left overs and its very filling!
