2 cups penne pasta
⅔ cup extra-virgin olive oil
¼ cup red wine vinegar
2 cloves garlic, crushed
1 tablespoon lemon juice
2 teaspoons dried oregano
salt and pepper to taste
10 cherry tomatoes, halved
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small red onion, chopped
½ cucumber, sliced
½ cup sliced black olives
½ cup crumbled feta cheese
Instructions: Greek Pasta Salad Recipes
Step 1: Fill a large pot with lightly salted water and bring to a rolling boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 10 minutes; rinse with cold water and drain well.
Step 2: Whisk olive oil, vinegar, garlic, lemon juice, oregano, salt, and pepper together in a bowl; set aside.
Step 3: Combine pasta, tomatoes, green and red peppers, onion, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over the pasta mixture and mix well. Cover and chill for 3 hours before serving.

This is a favorite in my family. And because we have people with celiacs/non celiac gluten sensitivity, I’ve switched the pasta for a GF alternative (usually ronzoni) for family gatherings and it’s still amazing.I tweak the dressing a bit and cut just a bit of the oil out and add a touch of extra vinegar and lemon juice and the liquid from the minced garlic (if I’m using it from a jar).I also like to add some bacon bits and frozen peas. Often, I’ll switch the red onion for baby greens or just leave them out completely (I’m a bit sensitive to red onion).In short, this is a very versatile recipe. My sister-in-law and I were recently talking about switching the ingredients up entirely as her picky (and celiac) daughters do eat this when I make it and we think that this will be a good option for their lunch bags.Can’t wait to make this more!
This is a great recipe. I used kalamata olives, as that's what I had, plus I feel they're more Greek. I'm not really a pasta salad fan, but needed to make something for a funeral luncheon. The dressing is great! Next time I'm going to substitute chick peas for the pasta for a healthier version and because I'm not really a pasta salad fan. I'm sure the dressing will be great with chick peas as the base, too! Thanks for the recipe!

Really lovely pasta salad! Thank you!I don't eat bell peppers so I swapped those for 1 stick of celery, extra cucumber, and extra tomatoes. Also decreased the red onion to 1/4 of a large onion so that it wouldn't be too overpowering. Added a handful of sliced kalamata olives and extra feta. Dressing is perfect, especially with fresh oregano! Such a delicious and easy lunch recipe :)
