This is basically chunky guacamole, but still good. Unless you use jumbo avocados I think the amount of onion and bell would still be too much and take away from the avocado, so just add what you like. I used red onion and an orange bell because Hubbs isn't a fan of green. For us, extra cilantro always! I had leftover grilled corn so threw that in as well. Great salad, used the leftovers on breakfast tacos!
I love this salad! I double it. I add 4 ears of fresh corn, cut off the cob. A jalapeño if I have one, red pepper instead of green, a container of cherry tomatoes, and a little minced garlic. Heavy on the cilantro. Delicious.
