½ cup butter, melted and cooled
2 tablespoons olive oil
2 cups blanched almond flour
1 teaspoon baking powder
½ teaspoon xanthan gum
½ teaspoon sea salt

Made this for my husband and he really liked it. I didn't have xanthan gum so I used unflavored gelatin and it worked great. I googled substitutes for xanthan gum and it was on the list. Definitely making it again.
I made this bread mostly as is, but didn’t have almond flour…I had that Birchbenders brand of keto pancake mix which is primarily almond flour (It does have some coconut flour in it). The attached pic shows bread pan used and toothpick for size reference. Visually, it looks great as the recipe pic shows.Fresh out of oven it was ok, very cornbread-like and dense. I tried with and without butter… I guess for keto it’s ok. My hubby had some and said it had a hint of coconut oil)… I didn’t taste that. This morning I tried making cinnamon toast using butter, Splenda, and cinnamon… nope didn’t work for me (Hubby ate it). As someone else suggested, I may try this as a French toast. Otherwise, not sure how to make this better as a bread.

Tasty! I substituted xanthan gum for a more natural binder: chia seeds (½ teaspoon chia seeds pulverized and mixed with 1 tsp hot water. I let them thicken ~10 mins). Consistency of the bread was dense but we liked that. I did have trouble getting my bread out of the pan, but perhaps I didn't thoroughly grease pan.
It was ok, very buttery taste. Almost overpowering. Can't believe they're spreading more butter on it in the video to eat. I think I'll 1/2 the butter and try it again. Also could use some seasoning in the bread - onion powder, garlic powder, rosemary, or something. Plain bread is pretty boring - if you're baking might as well get out the seasonings.
I found it salty I don’t know why. Texture was great and loved the flavour.
I made this and followed the instructions as provided - the only difference was I used a vegan butter (it was all I had at the time I made it). I was disappointed that the bread didn't rise as shown in the picture.
I'm KETO and yes, it is soooo hard to find a good recipe. I really like this one. It can be used as a basic for adding things like nuts or spices. My husband thought it was "cakey", but no... it's much more dense than that. He left a piece out from his middle night snack and it was "kinda" dry... perfect biscotti!!
