I wish I had first attempted this recipe to make a pesto lasagna or a homemade Mac and cheese dish. I think this would be an EXCELLENT white sauce for that! But, I made to pair with my (first!) Cordon Bleu recipe tonight and, while it IS good - it’s not blow my socks off. In my younger, learning-to-cook years, I would have no idea how to spruce this up and possibly, written this recipe off. Now I know better and I will remember this! 2,2 and 1+! You could easily add fresh, minced garlic to the butter sauté or even a splash of lemon juice/lemon zest to make this simple sauce a game changer. As written; a solid 4 star recipe. I loved this recipe. I made garlic scape pesto and was thinking of ways to use it up and I thought adding it to a white sauce would make a creamy garlic sauce. It was delicious and had it in my pasta. I love how simple this is and now I am trying to think of more sauces to make.
This is an easy recipe for a perfect base. It is a very mild sauce and works like a charm in baked mac and cheese, chicken pot pie and creamed spinach.
