Absolutely reduce the olive oil (This is a MUST!) and use rice wine vinegar instead of red wine, and add more pineapple juice than called for. (I added to taste and stopped measuring at some point.) It was perfect with those tweaks. I have made this twice and found that I liked the slivered almonds better than macadamia nuts.

I am sure the recipe as is is great as is but I can't help but mess with a recipe. I followed some of the suggestions here (less oil, a little sugar, added ginger and garlic) but I also added blue cheese. I know it sounds weird but it pairs amazingly with the pineapple. I also added about half of a Thai chilli and a red bell pepper.
