1 large head cabbage, shredded
1 green bell pepper, finely chopped
1 small small onion, finely chopped
2 carrots, shredded
2 cups boiling water
2 teaspoons salt
1 ½ cups white sugar
1 cup water
¾ cup cider vinegar
2 teaspoons celery seed
Instructions: Freezer Slaw Recipes
Step 1: Combine cabbage, green bell pepper, onion, and carrots in a large bowl. Mix boiling water and salt together in a separate bowl and pour over cabbage mixture; set aside for salt to draw out extra water from vegetables, about 1 hour. Drain well.
Step 2: Mix sugar, 1 cup water, cider vinegar, and celery seed in a saucepan; bring to a boil. Cook and stir until sugar is dissolved, about 1 minute. Remove the saucepan from the heat and cool completely.
Step 3: Pour cooled sugar-vinegar mixture over drained cabbage mixture in a large bowl and toss until slaw is well mixed. Spoon slaw into resealable plastic bags; squeeze out excess air, seal the bag, and freeze.
I ate a whole bowl before I bagged the rest for the freezer! Delicious!!!!!

Contrary to the review where there were issues with freezing, I followed the instructions exactly and have had no such issues. It freezes and thaws beautifully.It's a lovely tasting slaw and it tastes great with or without mayo.
Love this recipe. I also make a big batch so there is plenty to freeze. I drain in the bag from the freezer and then let "dry" awhile in a strainer before adding the mayo. Just the right amount of tang for a great coleslaw.
This was actually pretty good, though next time I will reduce the amount of sugar and completely eliminate the celery seed. Nothing like picking seeds from your teeth for hours after eating it...lol.

I have been looking for a while for a freezer cole slaw. My aunt used to make it and I always remembered it. It is very good even though I cut the sugar in half and it was still a little too sweet. Only problem is that it hasn’t made it to the freezer yet. Just can’t bring myself to put it away. Will probably have to make another batch to freeze.
The mayo, just went lightly with mayo. Salad was good either way, mayo or no mayo!
