Ingredients For Betsy's Mandarin Orange Salad Recipes
Step 1: In a jar with a tight fitting lid, combine the oil, vinegar, sugar, parsley, salt and pepper. Cover and shake well. Refrigerate until use.
Step 2: In a medium saucepan over medium low heat, cook and stir the almonds and sugar until the sugar is melted and the almonds are coated. Remove from heat, cool, and break apart. Store at room temperature until ready to serve salad.

Great summery salad! Went over well for group. Love the celery and almond crunchiness!!! Used iceberg lettuce which gave it even more crunch and kept it from wilting as the oranges released more liquid.One tip- when preparing the almonds, remove from heat as soon as sugar melts otherwise the hot mixture will easily brown too much or may burn!

I have made this salad many times. Special occasions and just for dinner. Have to give the recipe every time someone new tries it.
Was super delish! I did cut the oil to 1/4c tho and it was just as good. And I added a few dashes or more of tobassco to the jar of dressing!
I made the recipe as stated. When making the candied almonds keep a close on it. This recipe is delicious and I received may compliments. It is a keeper and I will be making it again. Its a nice change of pace.
