½ cup mayonnaise

I've made this recipe a few times add some additions. I use 2 lbs of chicken and 1 cup of mayonnaise. I add a tablespoon of dijon mustard, teaspoon of garlic powder, and onion powder. I like a lot of goodies, so I add extra celery, granny smith apple, red onion, and toasted walnuts.
I made this a few weeks ago. I used a bit more lemon juice and two celery sticks. It was great. Post-Thanksgiving, I just made a batch with leftover turkey breast, and it was equally great.
Added Greek olives to my chicken salad.

Great recipe! I had to substitute the almonds with walnuts & the typical celery with Asian celery. What a great pop of flavor. Everything else was per the recipe. So yummy, even my teenage granddaughter loved it! Can't wait to try this again with some other add in's mentioned in the reviews.

This is a great basic chicken salad recipe! The possibilities for add-ins are endless. When I don't have fresh celery available (I live in Vienna, Austria and the celery here is not always great) I substitute celery seeds for the flavor. I have added a crisp, chopped apple and walnut/pecan mix (I always have some chopped ready for cookies) to the basic salad with great results. Additionally, adding a bit of dry ranch dressing mix to the dressing give it a nice variation of flavors (I have also added bottled ranch dressing to the mayo, works well also). Great for sandwiches, wraps, salads or just by itself with some crackers for a quick snack!!! Thanks for a super recipe!
Thanks for the recipe, Jackie M. I would never have thought of adding toasted almonds to a chicken salad recipe had I not come across this recipe. It was really good. It must have been more than three decades since I made a mayonnaise-type chicken salad of any kind, as that's how long I've lived in an area with very cool summers. And somehow that's always been a food I associated with weather too hot to want warm food. I added tarragon and a few radishes to my salad. Good stuff!
I will add a bit of mustard depending on what kind I have in the refrig. Also red onions finely chopped and if I have some unused olives.
